Claude and Chantal’s story starts in the village of Fleury in Moselle.  Moselle sits on a wooded plateau on the hillsides high above the river Seille.  The village is about two and a half hours east of Paris Claude began his cafe and coffee career early.  When he was 12, he was an apprentice to his father.  Claude began studying blending and roasting techniques under his father’s direction, which learned from his father.

In 1990, Claude opened the first of what would eventually become seven café-coffee shops he would open in and around Metz (pronounced Mess)

Claude and Chantal met when she chose to join him in running one of his shops.  Chantal brought with her not only her smile and work ethic; she also brought with her knowledge of French fare that she acquired working in the bakery trade.  The work relationship turned into a love affair.  Chantal and Claude married in 2006. 

The happy couple later decided to bring their love of coffee and French food to the U.S.  In 2007, they opened Café de Paris here in Orlando.   The Cafe only offers the finest breakfast and lunch menu, French bakery delights and, of course, coffee.  You can read more about the coffee here.
